There is rejoicing in Iraq. Their first election of public officials. 8 million votes cast. 35 Iraqis lost their lives to terrorist bombs as they waited in line to vote. But the people did not bow to fear. They came out of the polls smiling. History in the making. Progress toward freedom. We rejoice with them.

Richard’s Mom makes the best bread & butter pickles! Here’s her recipe. Thanks, Mom.
7 lbs thin-sliced cucumbers 4 lbs thin-sliced onions
Mix together with 1/2 c table salt.
Cover with about 8 lbs of cracked ice. Let stand a minimum of 3 hours. Drain cucumbers well.
Pickling Mixture: 5 c sugar 1/2 Tbsp whole cloves 2 Tbsp celery seeds 2 Tbsp ground turmeric 3 Tbsp mustard seeds 5 c vinegar
Heat till sugar melts. Put cucumbers & onions into pickling mixture. Heat just to a boil and pickles start to change color.
Seal in hot, sterilized jars (wide-mouth). Makes 9-12 pints.

Ever since I can remember, my mother has used this Chicken BBQ Sauce, courtesy Animal Husbandry Dept., Kansas State College of Agriculture and Applied Science (later Kansas State University). My family loves it, too.
Combine in saucepan over low heat. Simmer for 1 hour. Store in refrigerator. 1/4 lb butter (I use 1/2 that or even olive oil) 1 c water 1/2 c white vinegar 3/4 tsp dry mustard 1 Tbsp each sugar, salt (I use 1/2 the salt) 1/2 tsp each chili powder, black pepper, paprika 1/2 Tbsp each tobasco sauce, worcestershire sauce 1/2 clove garlic, minced 1 small onion, minced
And that’s it! The easiest, best-tasting, never-burning chicken BBQ sauce!

Saturday morning, I decided to make some chili and put it in the crock pot to simmer until supper. I didn’t bother with the recipe as I know the ingredients well. It wasn’t until we sat down to eat that I realized I had confused some of my ingredients with my chicken barbeque sauce recipe. We like our chili mild. But the amount of Tobasco Sauce I used, coupled with the fresh Hungarian Paprika my daughter-in-law, Suzy, brought home from Hungary recently, combined to make the spiciest - albeit quite tasty - chili I’ve ever made!!
I’ll post my chicken BBQ sauce recipe, and maybe my chili recipe, but I won’t even try to post the combination!!

Well, it’s the end of another era, or generation maybe. The F-14 Tomcats are being replaced. I remember when the F-4 Phantoms were phased out and the new twin-tailed Tomcats were introduced. Those Phantom jets flew over our house in the mid-70’s, practicing their touch & go landings, and I took some of my own pictures, too! I could see the pilots and I used the opportunity to give prayer support to their safety and missions. I wonder what happened to those photos….

I just read Dan McMinn’s account of the Presidential Inauguration of Mr. Yushchenko as the new, duly elected president of Ukraine. How exciting!
Why is this exciting to me? Well, my new grandson/daughter, L.T., lives there, but only until Steve & Jodi can go get him/her and take him/her home to Arizona! Now THAT will be a change of geography!!

It’s time for our annual Toronto Airport Christian Fellowship (TACF) conference held at Founders Inn in Virginia Beach, VA. This year the conference is on Healing, Wholeness & Freedom. It’s being held the week-end of February 17-19. These conferences are always a special blessing for me. If you’d like to go, contact me and I’ll add you to our group (reduced rates).
