I’m going to a conference this week. It looks really interesting. There will be speakers from many different healing disciplines sharing, learning, integrating means of helping people.

Homemade Pizza – Nancy Ivy
Crust — (adapted from list of ingredients on Pillsbury Hot Roll Mix box in the 1970’s)
for 14” round pizza:
In quart bowl: 1 cup very hot tap water
Stir in until dissolved:
1 Tbsp dry yeast (one package Fleishman’s)
1/2 tsp salt
< 1/4 cup sugar (to taste)
Stir in about 3 cups flour.
Mix with floured hands until smooth.
Let rest, covered, in warm place, for about 10 minutes.
Dump dough onto lightly greased baking stone or pan.
Grease hands; press dough from center outward to cover pan.
Adjust rising (resting) time for thin or thicker crust. This gives me a good 1/2” crust when baked. Can double the recipe for larger pans.
Sauce — for 14” pizza: Mix together: 1 cup thick spaghetti sauce about 1 TBSP white vinegar about 1 TBSP worcestershire sauce 1-2 TBSP brown sugar Experiment to find your favorite combination of flavors!
Add sauce and toppings to taste.
Bake at 425 degrees for 13-15 minutes, till crust is golden.
Note: If the sauce is too soupy, the crust will need to bake a bit longer so the center will get done… and use less sauce next time.

Sweet Potato Bread Adapted by Nancy from Richard’s Mom’s recipe for Pumpkin Bread.
Pre-heat oven to 350 Degrees
Bake 1 1/4 hours in greased large tube pan, or
for 1 hour in 2 standard loaf pans, or 3 1-lb coffee cans.
Adjust cooking time for oven and size of pans used.
Cream together: 2 sticks softened butter 1 3/4 cup white sugar
Add: 3 eggs, one at a time, beat thoroughly after each egg.
Add: 1 tsp. vanilla extract 2 cups packed prepared sweet potatoes (baked, peeled, strained/riced) - dark orange ones are best! (yams)
Mix together then add slowly to above ingredients with wooden spoon or slow beater: (adjust spices to taste) 3 1/2 c. sifted flour 2 tsp. baking powder 1 tsp. baking soda 1-1/2 tsp. ground cinnamon 1/2 tsp. salt 1/2 tsp. ground cloves 1/2 tsp. nutmeg 1/2 tsp. ground ginger 1/2 tsp. ground allspice 1/2 to 1 c. chopped nuts (pecans)
Bake at 350 degrees in GREASED pan, 1-1/4 hour or till knife inserted in center comes out clean. Usually, the bread will pull away from the sides of the pan when done. Top will be cracked.
Cool a little, then remove from pan.
Serves well warm or cool, with vanilla ice cream or whipped cream.
Freezes Well.

Sweet Potato Pie - adapted from my mother’s pumpkin pie recipe
Mix well: 1 c. white sugar 1/2 tsp. salt 1 1/2 tsp. ground cinnamon 1/2 tsp. ground nutmeg 1/2 tsp ground ginger 1/2 tsp. ground allspice 1/2 tsp. ground cloves
Stir in each of following until smooth: 2 cups packed, baked, skinned, strained/riced sweet potatoes - dark orange ones are best! (yams) 1 2/3 c. (large can) undiluted evaporated milk 2 eggs
Fill 9″ unbaked pie shell (not too full- a double recipe will fill 3 9″ pie shells) Top with cinnamon-sugar & broken pecans Bake 425 degrees for 15 minutes, the 350 degrees for 30 minutes more, or until knife inserted comes out clean. Cool. Top with real whipped cream and serve warm. (also great for breakfast!!)

Standard Pie Crust - Nancy’s Mother’s recipe (Homemade with practice is better than bought anytime!!)
for a 2-crust pie: Mix together: 2 c. sifted flour 1 tsp. salt pinch baking powder Cut in till crumbly: 2/3 c. shortening Add a little at a time, only as much as is needed for working consistency: 1/4 c. cool water Roll out to desired size
